“Summer Sizzle” Wine Flight​

Perfect for mellow midsummer sipping, this “Flight” takes you to a warm, sunny paradise by showcasing wines that are generally light-bodied, lower in alcohol, and ideal for heat-friendly refreshment. 

Celene Crémant de Bordeaux Brut (France) - Crafted in the traditional method, this Crémant displays fine bubbles and elegant aromas of green pear, brioche, and citrus zest. Light-bodied with a refined mousse and dry finish, it delivers Champagne-like quality at a more approachable price. 

Fero Vineyards Dry Riesling (Susquehanna Valley) – A local Riesling from Fero Vineyards in Lewisburg, it is crisp with aromatics of green apple, white peach, and a hint of slate minerality. The bright acidity, light body, and restrained sweetness make it an ideal palate cleanser or partner for lightly spiced cuisine. 

Westmount Pinot Gris (Willamette Valley) – A crisp, delicate white featuring bright green apple and citrus blossom notes. Light and zippy with refreshing acidity and modest alcohol, it's ideal as the first, thirst-quenching opener. 

Sandeman Founders Reserve Ruby Port (Porto) - This vibrant ruby port bursts with rich flavors of ripe plum, red cherry, and dark chocolate, supported by a smooth, full-bodied texture. Aged in oak for a youthful intensity, it finishes with balanced sweetness and a touch of spice. Though often associated with winter, ruby port can shine in summer when served slightly chilled, highlighting its fruit-forward profile and refreshing character.  

Why These Selections? 
     
       Two Whites (Pinot G. and Riesling) lightweight, with aromatic vibrancy and bright acidity.   
       One Bubbly (Brut) adds effervescence while remaining low-alcohol. 
       One Sweeter Wine (Ruby Port) closes the Flight with a lightweight and gentle sweetness.  

“Dolce Vita” Wine Flight​

The perfect “Flight” to enjoy a tour of classic Italian elegance and charm in four thoughtfully selected wines: 

Montechiara Prosecco - This lively Prosecco bursts with aromas of white flowers, green apple, and citrus zest. With  its fine bubbles and crisp, off-dry finish, it’s the perfect aperitivo to evoke the Italian ritual of la dolce vita. 

Principessa Gavia Gavi – If you like pinot grigio you will love Gavi. Made from the Cortese grape in Piedmont, this  white wine offers notes of pear, citrus, and crushed almonds with a clean, mineral finish. Its delicate structure and refreshing acidity make it an ideal pairing for light pastas or seafood. 

Rocca delle Macìe Chianti – A quintessential Sangiovese-based red from Tuscany, this Chianti delivers ripe cherry, 
dried herbs, and a touch of earthiness balanced by soft tannins. It's food-friendly, rustic, and steeped in centuries of winemaking tradition. 

Cascina Chicco Guidobono Langhe Nebbiolo - This Nebbiolo from Langhe offers ethereal aromas of rose petals, red berries, and spice with elegant tannins and bright acidity. A more approachable cousin to Barolo, it showcases the grape’s nobility while remaining expressive and drinkable young. 

Why These Selections? 

 

What unites these wines is their food-friendliness, restrained alcohol, and sense of place. Italy's wine culture is inseparable from its cuisine, and these wines show how Italian vintners craft wines that elevate dining and celebration alike. This curated journey captures the “sweet life” of Italian viticulture—from the sunlit terraces of Veneto to the rolling hills of Tuscany—offering elegance, variety, and timeless appeal in every glass. 


This wine flight highlights the regional diversity, stylistic range, and deep cultural roots of Italian winemaking. Each bottle represents a cornerstone of its region: Prosecco from Veneto, Gavi from Piedmont, Chianti from Tuscany, and Nebbiolo from Langhe. The selections balance whites and reds, sparkle and stillness, and allow the guest to experience everything from the light-hearted charm of a bubbly aperitif to the noble structure of Italy's King of grapes, Nebbiolo. 

The “Noble Varietals”


Noble grapes are internationally recognizable grape varieties that produce high-quality wine. They are considered the building blocks of classic wines and are known for expressing the terroir of the place they are grown. Originally, there were six noble grapes identified: Cabernet Sauvignon, Pinot Noir, Merlot, Chardonnay, Sauvignon Blanc, and Riesling.  

**Due to the limited varieties of “Noble Selection Wines”, each Flight will contain 3 either White or Red Noble Varietals, and a 4th option in which the customer may choose any wine offered on any of our available Flights.

Classic White Noble Varietals​

Fero Vineyards Dry Riesling (Pennsylvania) - A local Riesling from Fero Vineyards in Lewisburg, it is crisp with aromatics of green apple, white peach, and a hint of slate minerality. The bright acidity, light body, and restrained sweetness make it an ideal palate cleanser or partner for lightly spiced cuisine.

Brancott Vineyards Sauvignon Blanc (New Zealand) –  This Sauvignon Blanc offers intense citrus zest, tropical fruit, and grassy herb notes balanced by racy acidity. Its’ refreshing, lean structure makes it perfect for light seafood or fresh salads in the summer heat. 

Butter Chardonnay (California)  – Smoky, full of charred wood and butter aromas, this wine is a great example of oaky and toasty wine...Full-bodied, with rich, tropical fruits that co-exist with its smoke and vanilla spice overlay. 

Why These Selections? 

 

Riesling, Sauvignon Blanc, and Chardonnay are considered three of the Noble White grapes because of their global presence, diversity of expression, and historical importance in both Old and New World winemaking. Riesling, originally from Germany, is prized for its aromatic complexity, naturally high acidity, and ability to age —ranging from bone dry to lusciously sweet. Sauvignon Blanc, originating in the Loire Valley and now thriving in places like New Zealand and California, offers bright, zesty wines with distinct herbaceous, citrus, or tropical profiles. Chardonnay, the most versatile of all, can be made in a range of styles—from lean and mineral-driven (like Chablis) to rich and oaked (like California or Meursault). 

The Noble Grapes – Red Varietals​

Seaglass Pinot Noir (Santa Barbara County, California) - Light to medium bodied, bursting with red berries and plum, with hints of vanilla and spice. Its silky tannins and refreshing acidity make it food-friendly and immediately approachable. (Restaurant Guru).

Sterling Vintner’s Collection Merlot (California) - Smooth and medium-bodied, offering plush black cherry, plum, and soft chocolate notes. The round, velvety tannins and approachable style make it a versatile companion for grilled meats or pasta with tomato-based sauces. (Restaurant Guru).

Joel Gott 815 Cabernet Sauvignon (Sonoma, California) –  Medium-bodied with blackberry, cassis, and subtle cedar, it balances ripe fruit and fine-grained tannins. Its approachable structure and moderate oak make it a solid introduction to Cab Sauv without overpowering the dinner table. (Restaurant Guru). 

Why These Selections? 

 

Among red varietals, Pinot Noir, Merlot, and Cabernet Sauvignon are regarded as the Original Noble Red Grapes due to their historic legacy, versatility, and ability to express terroir. Pinot Noir, the most delicate and finicky of the three, hails from Burgundy and is celebrated for its silky tannins, floral aromatics, and red berry profile—it can thrive in cool climates like Oregon or coastal California. Merlot, a softer, more plush varietal originating in Bordeaux, is beloved for its approachable structure and dark fruit flavors. Finally, Cabernet  Sauvignon—perhaps the king of reds—is known for its power, age-worthiness, and structure, making bold wines that are now icons of Napa, Bordeaux, and beyond. 


In this red flight, the Seaglass Pinot Noir from Santa Barbara represents a refined, fruit-forward style with elegance and balance. The Sterling Merlot brings supple texture and classic plum and cocoa notes, showing why this grape is a staple of both blends and varietal wines. Rounding out the trio, the Joel Gott 815 Cabernet Sauvignon offers a balanced expression of this noble varietal with black fruit and soft tannins—perfect for introducing guests to Cab’s bold, structured personality without being overwhelming. This lineup offers a progressive tasting journey from subtlety to strength, reflecting the richness and range of Noble Red Grapes.
